I don’t tend to make muffins (or let’s call them what they are – cupcakes) very often. If I’m making something cake-like it’s usually carrot or banana cake.

However, these Paul Hollywood (recipe) ones came out very well. Very light. I was cynical about leaving the mixture in the fridge for a long time but it definitely worked. These were very much a success, made Saturday.

What wasn’t a success, though, on the Sunday afternoon when I got home – was trying to make flapjacks. Hardly difficult, right? I’ve made them on occasion in the past. Only this time – the recipe that I had decided to follow said simply ‘grease the baking tin’ – rather than to use baking or parchment paper which I have done in the past when using other recipes. Suffice to say there was no getting them out of the tin – for love nor money. Ah well, fasting day today so one less distraction…
