Mad about bread

Over the past  year I’ve bought bread from a shop on only a handful of occasions. The rest of the time I make my own – usually one loaf a week. I’ve gone through many recipes and types. White sandwich loaves, wholemeal loaves, rolls, bagels. Sourdough of course! I still make sourdough on occasion.

But my long-time favourite is now linseed and soya bread. It is much healthier than white bread (containing linseed, rye flour, oats) – but is packed with taste. It doesn’t have that ‘dull but healthy’ taste that some wholemeal breads have.

Best of all? It’s a doddle to make. I maintain that anybody can make bread. There is no big secret to it.

The recipe I use is Dan Leppard’s, here. Pictures of it above, made in a loaf tin (bought for £1 from the Poundshop in Brixton, no less!). I usually hand-shape my dough, as per other images I’ve posted. But this loaf above was destined for the freezer so baking it in a loaf tin and then slicing it, just made it a bit easier.
